ui Hiong claims to specialise in using one particular potent ingredient—salted fish. Salting might have originated as a means of preserving food, but it's also a wonderful flavouring technique. In the case of Chinese salted fish, the flavour is so intense, it makes a piquant seasoning ingredient more than an item on its own. So the main specialities at Mui Hiong (a reference to a high-grade salted fish) have a satisfying and appetising saltiness to them. Some of the standards here that use salted fish to great effect include the steamed minced pork as well as the steamed fish. Homestyle cooking is the speciality here, and it's charmingly served in traditional Chinese dinnerware.
