Also known as soya bean paste, miso is made by fermenting grains such as soya beans, rice and barley. Try a variety of miso this July, like the Gindara Miso Zuke (marinated cod fillet with saikyo miso) and Shake Miso Yaki (salmon and shiitake mushroom rolls with miso sauce). There's more of course.
