For those not in the know, molecular gastronomy is a way of preparing dishes using unusual techniques (cooking in very low or high temps, for example) and substances, like liquid nitrogen or sodium alginate. In a nutshell, science concepts practiced on everyday cooking. While this cooking style has been a buzzword in the culinary circles for years, molecular gastronomy still remains pretty much under the radar in the city, with Lafite being the one restaurant that can be credited for pioneering it in KL. In June however, Mandarin Oriental will be flying in Chef Jeff Ramsey from the Tapas Molecular Bar in Tokyo. His creations have been compared to the famed Ferran Adria of El Bulli (a very highly regarded restaurant for serious food buffs), which gives epicureans much to be excited about. Calling upon his experiences of being in the thick of Tokyo’s haute cuisine scene, Ramsey will prepare a menu that is both simple and exquisite, using only the freshest ingredients (but of course) and blending influences from the East and the West. Expect tapas like scallops with pumpkin sorbet, carrot caviar, cabrales cuttlefish and saffron chocolate torte. We’re not talking about meals here, we’re talking about a complete experience altogether. Ramsey’s menu will only be available from 2 to 7 June (6pm - 8pm, or 8.30pm - 10.30pm) at the Pacifica Grill & Bar.
